Chicken Curry

This is one of my favorite dishes and I serve it with white rice! I have included a picture but I promise to update when I make this again because mine looks so much better than this one cause it’s covered in cheese y’all!

Ingredients

Chicken (I use the already cooked Rotisserie chicken but you can use boneless breasts, about 6)
2 small cans or 1 large can cream of mushroom soup
1 cup mayonnaise
2 Tbsp lemon juice
1-2 Tbsp curry power…I use 2 heaping cause I love it!
Shredded Monterey Jack cheese

Cut chicken in bite-sized pieces if using the Rotisserie and place in a 9×13 casserole or baking pan…otherwise, if you have the boneless breasts, cut into bite-sized pieces and brown in a small amount of oil in pan. Sprinkle with pepper. Place in pan.

In bowl, combine mayo, soup, lemon juice, and curry powder. Pour over chicken. Sprinkle cheese over entire casserole.

Bake at 350 degrees for 30-45 minutes or until cheese is browned and bubbly.

Ridiculous good!
